Rhubarb Kuchen

Base:

  • 1 cup Flour
  • 1/4 cup Sugar
  • 1 tsp. Baking Powder
  • 1 stick Butter - cut in
  • 1 egg

Filling:

  • 5 cups Rhubarb [cut into 1" pieces]
  • 1 pkg Strawberry Gelatin
  • 1/4 cup Sugar

Topping:

  • 1/2 cup Sugar
  • 1/4 cup Flour
  • 1/3 stick Butter

Sift together the Flour, Sugar and Baking Powder. Cut in the Butter. Add Egg and mix lightly into a ball. Pat into bottom of a 9"x9" pan, extending the edge 1" up the sides.

Add the Rhubarb evenly across the base. Mix together the Gelatin and Sugar and pour over the Rhubarb.

Mix together the Sugar, Flour and Butter. Sprinkle over the Rhubarb.

Bake at 375 degrees for 45-50 minutes.
