Florida Cake

This cake is best if made 1 or 2 days before serving.

BOTTOM LAYER:

Beat 6 Egg Whites until stiff. Add 1 cup Sugar and 1 teaspoon Vanilla. Beat again until mixed and set aside.

Crush 40 Ritz Crackers in a food processor until very fine. Add 1 cup Sugar and 1/2 cup Chopped Nuts to the crackers. Mix well and add to the egg white mixture. Blend together.

Spread mixture in a buttered 13"x9" pan. Bake at 350 degrees for 30 minutes.

Cool completely

MIDDLE LAYER:

Combine 1/2 cup Cocoa, 2 cups Powdered Sugar, 1/2 cup butter, 2 eggs and 1 teaspoon Vanilla. Beat mixture well.

Spread over the cooled bottom layer.

TOP LAYER:

Spread one large container of Cool Whip over the middle layer. Garnish with finely Chopped Nuts.

Refrigerate. Enjoy.
