Banana Bread

  • 3/4 cup Sugar
  • 1-1/2 cups of mashed bananas (3 large)
  • 3/4 cup vegetable oil
  • 2 eggs
  • 2 cups all-purpose flour
  • 1/2 cup chopped nuts (optional)
  • 1 teaspoon baking soda
  • 2 teaspoons vanilla
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Heat oven to 325 degrees.

Grease a loaf pan (either 9x5x3 or 8.5x4.5x2.5 inches) with shortening, using a pastry brush.

Mix sugar, bananas, oil and eggs in a large bowl with a wooden spoon. Stir in remaining ingredients. Pour into pan.

Bake until a wooden toothpick inserted in center of bread comes out clean, 60 to 70 minutes.

Let cool for 10 minutes, then loosen sides of loaf from pan and remove from pan.

Cool completely before slicing. Makes 1 loaf.
