Brandy Basted Salmon Fillets

  • 2 or 3 Salmon Fillets

Marinade:

  • 1/4 cup packed brown sugar
  • 2 tablespoons minced onion
  • 2 tablespoons Soy sauce
  • 1/4 cup Brandy

4 to 6 hours before cooking, combine the ingredients for the marinade. Put the Salmon fillets into a large Ziploc bag, and pour in the marinade. Seal and turn the bag over several times to completely coat the salmon. Refrigerate, turning the salmon over every hour or so.

Place the salmon skin side down in a shallow roasting pan, pour marinade over the top and cover with foil. Bake at 350 degrees for 20-25 minutes.

Serve the fillets, and pour remaining sauce into small bowls for dipping. Yum!
